Introduction To Hazelnut Oil Processing Technology
The bulk of hazelnut is either consumed in crude form or grinded in the form of baking ingredient or a chocolate additive, in confectionery and ice-cream. Though commonly used for cooking and in salad dressings hazelnut has enormous usage in the health & wellness industry. It finds excellent usage in hair care as well as a carrier oil for aromatherapy or massage oils. Roasted hazelnut oil’s sweet taste and distinctive aroma makes it a desirable ingredient in the kitchen. It is very versatile on the kitchen table and is used in a large variety of salad dressings, particularly vinaigrettes and works wonderfully with citrus fruits, raspberries and other naturally sweet foods. Hazelnut oil is excellent for wellness and can be used to lubricate the skin during massage therapy sessions. Since it easily penetrates the skin tissue, it also acts as a moisturizer and ensures that the skin remains soft and elastic. Process Of Hazelnut Oil Refining
After being extracted from seeds, hazelnut oil is obtained through a multi-stage process that can be physical or chemical process, but only physical process is beneficial due to high FFA. This helps attains the desired qualities like taste, texture and color after the elimination of unwanted substances.
The multi-stage hazelnut oil refining process is as follows
- Degumming
- Continuous Bleaching
- Winterization
- Deodorization
Degumming
Degumming is the process to remove phospholipids. The latter are major impurities as they can lead to darker coloured oil that tastes off -flavour. Degumming is undertaken concurrently to improve its physical stability and facilitate further refining. The process eliminates phosphatides, pigments and other impurities. Jagdish customizes degumming processes based on methods of processing, chemicals used and the content of phosphatides in the crude vegetable oil to achieve optimum results.
Bleaching
Degummed oil is mixed with the soil that is a vacuum level, where it is dried and de-aerated. The bleaching earth absorbs the main particles of colour bodies as well as metal contamination and oxidizing materials in the oil.
Continuous Bleaching
Hazelnut Bleaching is carried out with acid treatment followed by mixing of Bleaching clay which helps to eliminate the Trace metals, dirt, colour pigments, phospholipids, polycyclic aromatic compounds and numerous other impurities are which are partially present in degummed oil.
Winterization
Hazelnut oil contains roughly 1000-1500 ppm waxes which need to eliminate by winterization of bleached oil to improve the quality and appearance of refined oil. Jagdish’s unique design of winterization process reduced the wax below 20 ppm in winterized oil and appearance of oil is absolutely clear even at low temperature.
Deodorization
Deodorization increases the oil’s flavour and oxidative stability by nearly complete removal of FFA and other volatile odour and flavour materials, through partial removal. Jagdish has developed unique design of deodorizer for Hazelnut oil to reduce the FFA content from 20 % to 0.1% by keeping valuable nutrients intact in the oil.
